This refreshing recipe for warm grapefruit tea was first published in the February 2008 issue of Body+Soul.

Ingredients
2 cups ruby red grapefruit juice (squeezed from 2 grapefruits)
2 to 4 tablespoons honey
1 cinnamon stick
1/2 teaspoon whole allspice berries
Instructions
In a medium pot, combine juice, honey, cinnamon, allspice, and 1/2 cup water. Bring to a boil over high heat; strain and discard solids. Serve with a grapefruit segment or strip of zest.

Pink Grapefruit and Green Tea
Ingredients

4 grapefruits
1 teaspoon powdered green tea (“matcha”)
Instructions
Juice grapefruit and bring 1 cup of the juice to a boil. Stir in green tea. Add to the remaining juice. Refrigerate.

Grapefruit Honey Mint Tea
Ingredients

2 sprigs of mint (extra for garnish, if desired)*
3/4 cup water
3/4 cup fresh grapefruit juice (~1 whole grapefruit)**
Honey, to taste (~1 1/2 tsp.)
Instructions
Put water and mint sprigs into a small pot. Heat over medium heat and bring to a boil.
While the water is boiling, cut the grapefruit in half and squeeze to juice.
Once the water is boiling, reduce to a simmer. Simmer for ~2-3 minutes, then remove sprigs of mint. Add grapefruit juice and honey. Adjust honey based on desired sweetness. Pour into a mug and garnish with extra mint, if desired. Enjoy warm.
Notes:
This recipe can be easily scaled up. Just use a 1:1 ratio for grapefruit juice and water; and adjust the rest accordingly.
*Each sprig should have ~15 mint leaves (~30 leaves total). If you have smaller sprigs, just add an extra one to the pot. They don't steep for long, so there needs to be enough mint to extract flavor.
**The juice yield can differ by fruit. Best to have an extra grapefruit on hand in case you run a bit short. And, that way you can make extra! If you want to remove all traces of pulp, strain juice before adding to hot water.

Ingredients

- Graperfruit

- Honey
Instructions
Firstly, peel off the yellow-orange skin, you also can make this tea using the skin. But it tastes nasty, and need a lot of working procedures to deal with it. So, I only use the flesh.
Then, peel off the white skin, left the flesh. If you’re not a big fan of bitter, make sure the white skin removed totally, since it is the most bitter part.
Put the flesh and Crystal sugar mixture in the pan, mix in small amount of water. How much crystal sugar, more or less, it is up to your preference.
Then we put it on fire, cook for about 40 min, stirring occasionally, until thickened.
Take the mixture out into glass jars, waiting for cooling
Since high temperature will destroy the nutrition of honey, so we must waiting for cooling, mix into honey.
Then, put the mixture into refrigerator.
Prepare a cup of warm water, put honey grapefruit tea in the water, stir the tea to make it well mixed.
Beside drinking, you can also eat it as the jam.
Sit back and enjoy!
