Masala Tea Ice Cream Recipe

 


Ingredients ---Makes 1 quart.(4 cups)
1 star anise star

10 whole cloves
10 whole allspice
2 cinnamon sticks
10 whole white peppercorns
2 cardamom pods, opened to seeds
1/4 cup full-bodied black tea (Ceylon or English Breakfast)
1 cup of milk
2 cups heavy cream (divided, 1 cup and 1 cup)
3/4 cup sugar
A pinch of salt
6 egg yolks
Method
1 Into a heavy saucepan put the 1 cup of milk, 1 cup of the cream and the chai spices - star anise, cloves, allspice, cinnamon sticks, white peppercorns, and cardamom pods, and a pinch of salt. Heat the mixture until steamy (not boiling) and hot to the touch. Lower the heat to warm, cover, and let stand for 1 hour.
2 Reheat the mixture until steamy hot again (again not boiling), add the black tea leaves, remove from the heat, stir in the tea and let seep for 10 minutes. Use a fine mesh strainer to strain out the tea and spices, pouring the infused milk cream mixture into a separate bowl. Return the milk cream mixture back to the heavy bottomed saucepan. Add the sugar to the milk cream mixture and heat, stirring, until the sugar is fully dissolved.
3 While the tea is infusing in step 2, prepare the remaining 1 cup of cream over an ice bath. Pour the cream into a medium size metal bowl, set in ice water (with lots of ice) over a larger bowl. Set a mesh strainer on top of the bowls. Set aside.
4 Whisk the egg yolks in a medium sized bowl. Slowly pour the heated milk cream mixture into the egg yolks, whisking constantly so that the egg yolks are tempered by the warm mixture, but not cooked by it. Scrape the warmed egg yolks back into the saucepan.
5 Return the saucepan to the stove, stirring the mixture constantly over medium heat with a wooden spoon, scraping the bottom as you stir, until the mixture thickens and coats the spoon so that you can run your finger across the coating and have the coating not run. This can take about 10 minutes. The minute this happens the mixture should be removed from heat immediately, and poured through the sieve over the ice bath to stop the cooking (step 6).

6 Pour the custard through the strainer (from step 2) and stir into the cold cream to stop the cooking.
7 Once initially chilled in the ice bath, chill the mixture thoroughly in the refrigerator (at least a couple of hours). Freeze the mixture in your ice cream maker according to the manufacturer's instructions.
8 Store in an airtight container in your freezer for several hours before eating. Note that the ice cream will be quite soft coming out of the ice cream maker. It will continue harden in your freezer. If stored for more than a day, you may need to let it sit for a few minutes to soften before attempting to scoop it.

 


Masala Chai Ice Cream Recipe
This recipe yields and authentically piquant “masala chai” (“spiced tea”) flavor and rich, creamy
Prep Time: 22 minutes
Cook Time: 2 hours
Total Time: 2 hours, 22 minutes
Yield: Serves about 6.
Ingredients:
1 cup light cream (equal to 1/2 a pint of light cream)
1 chilled small can of sweetened, condensed milk (14 oz.)
4 whole cloves
2 crushed green cardamom pods
2 crushed peppercorns
1 tsp. vanilla extract
1 cinnamon stick
1 grape-sized piece peeled, chopped ginger
2 tbsp. black tealeaves (preferably Assam)
Preparation:
Combine all ingredients except for the black tealeaves in a saucepan. Bring to a simmer.
Simmer on medium-low for 15 minutes, stirring often.
Add the black tealeaves and simmer for 5 more minutes, stirring often.
Strain the mixture.
Chill until cold.
Prepare in ice cream maker as directed.
Serve within one week.

350ml/12fl oz water
100ml/3½fl oz milk
4 black peppercorns
10 green cardamom pods, lightly crushed
good pinch green fennel seeds
small piece cinnamon stick
1 tsp fresh ginger, peeled and roughly sliced
1 tea bag
sugar, to taste
salt, to taste (optional)
Preparation method
Heat the water and milk in a pan with the spices and ginger until it comes to the boil. Turn the heat down and cook over a low to medium heat for 15 minutes. Be careful as the milk can easily rise and boil over.
Once the volume is reduced to a large cupful, add the teabag and let it brew for one minute, or longer if you like strong tea.
To serve, strain into a cup and add sugar or salt if using, to taste.

Another recipe for 8 cups
Ingredients
4 cups water
2 whole star anise
1/2 tablespoon ground cardamom
12 whole cloves
2 cinnamon sticks
1 large piece ginger, candied or fresh, diced
1 teaspoon-1 tablespoon crushed black peppercorns
2 bay leaves
8 bags black tea (or equivalent loose)
4 cups milk, hot
1/4 cup honey, or brown sugar
Preparation Instructions

Combine all ingredients except milk and sweetener, and boil for 10 minutes. Strain. Add the hot milk, and mix, with your choice of honey or brown sugar.

Cardamom Tea
Ingredients: (makes 2 cups)
2 cups water
8-10 green cardamom pods
2 green tea bags (optional)
1 tbsp grated orange rind (or fresh orange juice)
Honey or agave nectar (optional) 
Directions:
Add the water to a saucepan and bring to a boil, then reduce to a simmer. Crack open the green pods and add to the saucepan and simmer for 2-3 minutes. The cardamom seeds will dissolve in their pods.
Turn off the heat, and if using, add the teabags and the orange rind (or juice) and let steep for 5-10 minutes.
Remove the teabags and pods, and if you like a bit of sweetness, add the honey or agave and serve

Fresh: Add the fresh parsley to a cup and pour on some *boiling water. Let steep (sit) for 5-10 minutes before serving. You can drink the herbs.

Dried: Use like you would loose leaf tea leaves and do the same as above. Or, in a saucepan heat the water to *boiling and then turn off the heat. Add the dried herb and let steep (sit) for about 5-10 minutes. If you want pour through a strainer.

That's it! A refreshing healthy cup of parsley tea in no time at all!

*Boiling herbs and spices too long may negate some of the benefits.

1 Into a heavy saucepan put the 1 cup of milk, 1 cup of the cream and the chai spices - star anise, cloves, allspice, cinnamon sticks, white peppercorns, and cardamom pods, and a pinch of salt. Heat the mixture until steamy (not boiling) and hot to the touch. Lower the heat to warm, cover, and let stand for 1 hour.
2 Reheat the mixture until steamy hot again (again not boiling), add the black tea leaves, remove from the heat, stir in the tea and let seep for 10 minutes. Use a fine mesh strainer to strain out the tea and spices, pouring the infused milk cream mixture into a separate bowl. Return the milk cream mixture back to the heavy bottomed saucepan. Add the sugar to the milk cream mixture and heat, stirring, until the sugar is fully dissolved.
3 While the tea is infusing in step 2, prepare the remaining 1 cup of cream over an ice bath. Pour the cream into a medium size metal bowl, set in ice water (with lots of ice) over a larger bowl. Set a mesh strainer on top of the bowls. Set aside.
4 Whisk the egg yolks in a medium sized bowl. Slowly pour the heated milk cream mixture into the egg yolks, whisking constantly so that the egg yolks are tempered by the warm mixture, but not cooked by it. Scrape the warmed egg yolks back into the saucepan.
5 Return the saucepan to the stove, stirring the mixture constantly over medium heat with a wooden spoon, scraping the bottom as you stir, until the mixture thickens and coats the spoon so that you can run your finger across the coating and have the coating not run. This can take about 10 minutes. The minute this happens the mixture should be removed from heat immediately, and poured through the sieve over the ice bath to stop the cooking (step 6).

6 Pour the custard through the strainer (from step 2) and stir into the cold cream to stop the cooking.
7 Once initially chilled in the ice bath, chill the mixture thoroughly in the refrigerator (at least a couple of hours). Freeze the mixture in your ice cream maker according to the manufacturer's instructions.
8 Store in an airtight container in your freezer for several hours before eating. Note that the ice cream will be quite soft coming out of the ice cream maker. It will continue harden in your freezer. If stored for more than a day, you may need to let it sit for a few minutes to soften before attempting to scoop it.

 


Masala Chai Ice Cream Recipe
This recipe yields and authentically piquant “masala chai” (“spiced tea”) flavor and rich, creamy
Prep Time: 22 minutes
Cook Time: 2 hours
Total Time: 2 hours, 22 minutes
Yield: Serves about 6.
Ingredients:
1 cup light cream (equal to 1/2 a pint of light cream)
1 chilled small can of sweetened, condensed milk (14 oz.)
4 whole cloves
2 crushed green cardamom pods
2 crushed peppercorns
1 tsp. vanilla extract
1 cinnamon stick
1 grape-sized piece peeled, chopped ginger
2 tbsp. black tealeaves (preferably Assam)
Preparation:
Combine all ingredients except for the black tealeaves in a saucepan. Bring to a simmer.
Simmer on medium-low for 15 minutes, stirring often.
Add the black tealeaves and simmer for 5 more minutes, stirring often.
Strain the mixture.
Chill until cold.
Prepare in ice cream maker as directed.
Serve within one week.

Ingredients

350ml/12fl oz water
100ml/3½fl oz milk
4 black peppercorns
10 green cardamom pods, lightly crushed
good pinch green fennel seeds
small piece cinnamon stick
1 tsp fresh ginger, peeled and roughly sliced
1 tea bag
sugar, to taste
salt, to taste (optional)
Preparation method
Heat the water and milk in a pan with the spices and ginger until it comes to the boil. Turn the heat down and cook over a low to medium heat for 15 minutes. Be careful as the milk can easily rise and boil over.
Once the volume is reduced to a large cupful, add the teabag and let it brew for one minute, or longer if you like strong tea.
To serve, strain into a cup and add sugar or salt if using, to taste.

Another recipe for 8 cups
Ingredients
4 cups water
2 whole star anise
1/2 tablespoon ground cardamom
12 whole cloves
2 cinnamon sticks
1 large piece ginger, candied or fresh, diced
1 teaspoon-1 tablespoon crushed black peppercorns
2 bay leaves
8 bags black tea (or equivalent loose)
4 cups milk, hot
1/4 cup honey, or brown sugar
Preparation Instructions

Combine all ingredients except milk and sweetener, and boil for 10 minutes. Strain. Add the hot milk, and mix, with your choice of honey or brown sugar.

Cardamom Tea
Ingredients: (makes 2 cups)
2 cups water
8-10 green cardamom pods
2 green tea bags (optional)
1 tbsp grated orange rind (or fresh orange juice)
Honey or agave nectar (optional) 
Directions:
Add the water to a saucepan and bring to a boil, then reduce to a simmer. Crack open the green pods and add to the saucepan and simmer for 2-3 minutes. The cardamom seeds will dissolve in their pods.
Turn off the heat, and if using, add the teabags and the orange rind (or juice) and let steep for 5-10 minutes.
Remove the teabags and pods, and if you like a bit of sweetness, add the honey or agave and serve

Parsley tea has been used for its therapeutic properties for centuries. The parsley plant, also known as Petroselinum crispus, is the most easily identified of all herbs. It name is from the Greek word meaning "rock celery" (it is a relative of celery).

Parsley Tea


Ingredients: (makes 2 cups)
2 cups water
3 tbsp chopped fresh parsley leaves
OR
1½ tbsp dried parsley
Directions:
Fresh: Add the fresh parsley to a cup and pour on some *boiling water. Let steep (sit) for 5-10 minutes before serving. You can drink the herbs.

Dried: Use like you would loose leaf tea leaves and do the same as above. Or, in a saucepan heat the water to *boiling and then turn off the heat. Add the dried herb and let steep (sit) for about 5-10 minutes. If you want pour through a strainer.

That's it! A refreshing healthy cup of parsley tea in no time at all!

*Boiling herbs and spices too long may negate some of the benefits.
